It unites the winemaking family's tradition with the special regional character of Champagne. Viticulture

  • Growing region Vallée de la Marne.
  • Clay-limestone soil.
  • From a 35-year-old vineyard.
  • Manual harvest with strict selection of grapes.
  • Integrated viticulture program and treatment with Norwegian algae.

Winemaking

  • Long alcoholic fermentation at 16°C.
  • Later tapping in February.
  • No malolactic fermentation.
  • Without fining and filtration.
  • Storage for 5 years in the cellar.
  • Only the juices from the very first pressings are used.
  • First fermentation in temperature-controlled stainless steel tanks.

 

Tasting

Champagne with a light golden color, a delicate fizz, and beautiful persistent foam. The nose is dominated by the scent of marzipan and a hint of brioche on the palate.

Serving suggestions:

A "must" for your aperitif. This subtle and refined wine pairs perfectly with fish, but also with foie gras.
