Distillation takes place in five phases. In the first four phases, unwanted chemical and organic substances are to be eliminated. In the fifth phase, using a state-of-the-art alembic, the fine aromas of the grape varieties are to be selected. O de V is stored for a short time at its final alcohol content, and then the distillate is allowed to run over a bed of natural charcoal and dried birch bark. Filtration takes place in several phases: decanting, followed by sieving with linen cloths and traditional filters, a micro-organic cleaning under electrostatic voltage, and finally with cross-flow filters, which ensure an absolutely perfect and pure product.
Citrus Aurantinum / Bitter Orange
Originally a hybrid, the bitter orange became its own species over the centuries. The bitter orange differs from the sweet orange in that its skin is lighter and rougher, but above all in the bitter taste of its pulp. Arabs cultivated the plant since the 9th century and imported it to Sicily in the 11th century, where it is still cultivated today. O de V gets its aroma through cold maceration, by marinating bitter orange peel in high-proof vodka for 40 days. The product is then diluted with deionized and demineralized water to obtain the desired alcohol content (40%). After the product has stabilized, a three-week decantation period follows, with subsequent three months of storage in bottles.

By utilizing the great organoleptic properties of some not-too-aromatic international and local grape varieties (primarily Chardonnay, Glera, Incrocio Manzoni) and everything obtained from them (wine, must, pulp, skins), a product of the highest quality was born.
